Polysorbate

Polysorbates are a group of nonionic surfactants (emulsifiers) derived from sorbitol and fatty acids, used widely in food, cosmetics, and pharma to blend oil and water, solubilize ingredients, and stabilize products like ice cream, lotions, and vaccines by reducing surface tension. Common types include Polysorbate 20 (laurate) and 80 (oleate), acting as wetting agents, dispersants, and thickeners to create smooth textures, improve consistency, and prevent ingredients from separating.
